Maussane is the heart of the <em>Vallée des Baux-de-Provence</em> protected designation. Here you cannot talk about the garden without talking about the olive: it sets the module, the rhythm, the signature. Around 70% of our work in the village is connected in one way or another to the olive grove — ornamental, productive, or both.
On the estates of the plain between Maussane and Mouriès, we prune olives to the traditional goblet form: opening the centre, keeping three or four main limbs, removing water shoots and exhausted wood. Pruning happens between March and April, before flowering, and directly shapes the November harvest. Each of the protected varieties (Aglandau, Salonenque, Verdale, Grossane, Picholine) calls for a different intensity of pruning.
The mas gardens around the village follow a recurring pattern: an approach avenue of olives or plane trees, a terrace shaded by a vine pergola or a plane-leaved mulberry, a mineral parterre, a rectangular stone basin, a walled vegetable plot at the edge. We design and restore these gardens with particular attention to local species (viburnum tinus, strawberry tree, pittosporum, viburnum) and to mulches that hold summer coolness in the soil.
Landscape stonework is in constant demand in Maussane: repairing stone walls, laying calade approaches, building masonry seating, basin coping. We work exclusively in local Alpilles stone, with lean joints or fully dry-laid depending on how sensitive the setting is.
